Crunchy outside chewy & large gooey chocolate chunks.
225g unsalted butter
225g Light brown sugar
225g Sugar
2 Eggs
9g Vanilla extract
450g All Purpose Flour
12g Baking soda
3g Sea salt
500g good quality dark chocolate chopped into large chunks (2 > 2.5 cm)
Method:
*Beat group 1 on machine with paddle until light and creamy approximately 10 minutes.
*Add combined egg & vanilla mixture gradually to batter & mix smooth scraping down.
*Add sifted dry ingredients and mix slowly until combined.
*Add chunks of chocolate to batter pulsating machine ensuring not to break up chocolate.
*Remove from machine, roll into logs using silicon paper and refrigerate until needed.
*Cut from roll and lay out onto silicon paper and bake at 190.c until lightly golden.
*Serve warmed for best results, and ensure chocolate chunks are BIG!!
