Method |

|
In a saucepan combine the water and cream together and bring to the boil. |

|
Combine the sugar and cocoa powder together and whisk into the hot mixture. Continue to whisk until mixture re boils. |

|
Place the chopped dark chocolate into a mixing bowl. Remove saucepan from heat and pour hot mixture over the chopped dark chocolate and mix until smooth and no lumps. |
||||
|
Reserve mixture in fridge until required or serve immediately. |
||||
|
If taking mixture from the fridge warm it up prior to serving. |
