What is compound chocolate?
Compound chocolate is the process and ingredients that are added to cacao beans, this is not classed as chocolate. Compound chocolate has additives such as cocoa powder, vegetable fats and other additives.
When chocolate is made using this method, it lacks the full depth and complexity of flavour that is found in authentic chocolate and it can also leave a greasy aftertaste on the palate.
At Cacao, we do not use compound chocolate. We only use the finest ingredients that have been sourced locally and from the best chocolate regions in the world to create an authentic chocolate sensation.

Why can chocolate turn white?
Chocolate may appear white, or develop a white residue on the surface of the chocolate when it is exposed to temperature fluctuations, which can lead to the fats in the chocolate to rise to the surface. When this occurs, the chocolate is still edible, however, the quality and texture of the chocolate will dramatically be affected.
At CACAO, we do not recommend storing your chocolate for more than 12 months. We suggest to enjoy your chocolate selections while they are still fresh and have maintained their flavour integrity.

Does a higher cacao content mean a higher quality of chocolate?
A higher cacao content does not always mean that you are receiving a higher quality chocolate. The key to producing premium and high quality chocolate is to achieve a fine balance of flavours and textures from the best sourced cocoa beans in combination with an exceptional manufacturing process. In fact, a high cocoa content unbalanced will make the chocolate extremely bitter, dry and unpalatable.

How do I best store my chocolate?
CACAO chocolate should be stored in a cool, dry place, at room temperature, and away from strong or direct sunlight. We do not recommend refrigeration of the premium chocolate from CACAO in order to best maintain the integrity of the product.
Chocolate should also be kept away from foods with a potent smell, such as onions, as it may affect the taste and quality of the confection.

What is the caffeine content in chocolate?
Caffeine is a natural compound that is found in plant sources and is naturally found in substances such as tea and coffee, however, there is very little caffeine that is found in chocolate, especially compared to other food sources.
The caffeine content will vary depending on the product and depending on the type of cocoa bean and its origin.
As a general rule of thumb, 30g of dark chocolate contains 20mg of caffeine which can be compared to a standard cup of coffee which contains 80-155 mg of caffeine.
