Serving up dessert creations to world cruise passengers onboard Regent Seven Seas Mariner

Opportunities like this don't come around very often! Tim Clark, the Creative Director behind CACAO, was invited in April as a guest pastry chef onboard the luxurious Seven Seas Mariner to join the Maldives to Dubai portion of Regent's 2023 World Cruise taking passengers on an epic 157 days journey from Miami to Barcelona.  

"It was a privilege to be back at sea creating dessert experiences for guests. The Seven Seas Mariner is a luxury cruise ship, with amazing quality of produce and a world class cuisine. I had a great time working with the team who were so welcoming and ultra professional," explains Clark. 

Clark spent ten days onboard working with the inhouse pastry team to bring his recipes to life. His plated desserts were featured on the dinner menu every night in the main dining room showcasing his creativity and flair for superb flavour and texture combinations. 

Guests could also get up close and personal and learn a few tricks and tips from Tim during his cooking demonstrations. These included an Australian favourite Pavlova with mango banana compote, whipped coconut ganache and passionfruit curd, and a CACAO specialty macaron with vanilla crème, raspberry gel and pistachio crème anglaise.

"Some of my best memories have come from working on five-star cruise ships in my early twenties. The experiences I had, the chefs I had the privilege to meet and the friendships I made will be with me forever. So having the opportunity to return at a later part of my career has been very special" says Clark.
