Storing your CACAO chocolates and macarons correctly makes a real difference to freshness, taste and quality. Below is everything you need to know, by product type.
To maintain the freshness of your chocolate, we recommend that you store your CACAO chocolates in a cool and dry place away from heat and direct sunlight. The optimum holding temperature of our chocolate is between 15 – 20 ̊C with low humidity. Please remember to never leave your chocolates in a parked car for any length of time.
It is also important that you don’t keep your chocolates near any perfumed items such as soaps, and spices or vegetables with strong odours such as garlic. As the cocoa butter in the chocolate readily absorbs odours, be sure to store your chocolate away from such items as they may affect the taste and quality of the product.
If stored correctly, our signature chocolates can have a 3 month shelf life and our chocolate bars and petit bites a 6 month shelf life. However, we suggest to eat your chocolate selections while they are still fresh to best enjoy the full flavour profile of the chocolate.
In short: keep it cool, dry and away from strong odours.
CACAO macarons are made from natural ingredients without the use of any preservatives. Therefore, they should be eaten within 14 days of despatch.
The best way to enjoy a macaron is to eat it fresh at room temperature. If you are not eating them straight away it is recommended to store them in the fridge. As macarons are best enjoyed at room temperature, we suggest you take them out of the fridge half an hour before you are ready to have them.
Please don’t freeze your macarons as they are extremely fragile and if frozen, ice crystals can form within the delicate meringue shell. When the macarons are left to defrost, these ice crystals will create moisture which, in turn, will cause the light shell of the meringue to collapse.

Can I freeze macarons? No. Macarons are delicate, and freezing causes ice crystals to form inside the meringue shell. When defrosted, the resulting moisture causes the shell to collapse.
