Can I store my chocolates in the fridge?
At CACAO, we do not recommend that you store your chocolates in the fridge, however if you have no other option then we suggest that you keep the chocolates in their original wrapping and packaging, wrap them in plastic and then seal them in an airtight container.
When choosing to eat your chocolates, we advise you to remove your chocolates from the fridge in their wrappings at for at least an hour before eating them so that your chocolate can reach room temperature. This is when the chocolate is at its maximum flavour potential and is when it is the most delectable.

What is Couverture Chocolate?
Couverture chocolate is one of the most premium and highest quality chocolates that contains minimum levels of cocoa butter, usually around 32%. This, in combination with carefully tempering our couverture chocolates, give you that pleasant and satisfying snapping sound when it is broken in two.

Why has my chocolate turned white?
Chocolate can turn white when there is a fluctuation with the temperature of the chocolate. The cocoa butter within the chocolate has separates, which then moves the fat to the outside surface. This is called chocolate or sugar bloom and although it does not look appealing, it is still safe to eat.
At CACAO, we recommend that you store your chocolates in a cool, dry place and eat them while they are still fresh to maintain the integrity of the chocolate and for you to experience the maximum flavour sensations of our premium handmade Belgian Couverture chocolates.

What is Couverture Chocolate?
Couverture Chocolate is an industry term that is premium chocolate that contains a minimum of 31% cocoa butter. The word ‘Couverture’ is protected by European law and can only be used to characterise chocolates that have a fat content of at least 31%.
The chocolate should be produced using only the highest quality cocoa beans and ingredients and is produced in a controlled and expert manufacturing process.

What are the differences between white, milk and dark chocolate?
Cocoa beans undergo a process in order to separate the cocoa mass into two elements: cocoa butter and cocoa liquor. Each of these have their own constituencies. The cocoa butter is creamy and white whilst the cocoa liquor is dark and rich. These components are then used in varying blends and combinations to produce the 3 main types of chocolate: white, milk and dark.
