When purchasing your macarons from CACAO, we recommend that you keep your macarons in the refrigerator and it is important to note that they should be consumed within 3-7 days after purchase. To ensure the most optimum flavour and texture experience, let the macarons come to room temperature for roughly 20 minutes before serving.
What is a macaron?
A macaron is a traditional French sweet meringue-based cookie that is made from sugar, milled almonds combined with egg whites and is then filled with a range of fillings from jam, buttercream and ganache. These desserts are a small French delicacy and although they are made from simple ingredients, this technique is extremely difficult to perfect.
How long to macarons last for?
To enjoy macarons at their optimum flavour and texture, the macarons from CACAO are at their best when eaten within three days of purchase, however, they can last for up to 7 days if kept in the refrigerator. After purchasing, we recommend keeping your macarons in the refrigerator. We do not suggest that you freeze your macaron they are extremely fragile and if frozen, ice crystals can form within the delicate meringue shell. When the macarons are left to defrost, these ice crystals will create moisture which, in turn, will cause the light shell of the meringue to collapse.
What is ganache?
Ganache is a French term and is a glaze or sauce that is used for filling pastries, such as macarons and is made from chocolate and cream. Ganache has a rich flavour that is shiny and smooth in texture. The ganache made in our Melbourne based Chocolatiere from the finest Belgian Couverture chocolate and other premium ingredients sourced from the best chocolate regions in the world.
