How can you distinguish the difference between Couverture chocolate from compound chocolate?
Put simply, compound chocolate does not possess the same refined qualities as couverture chocolate.
Couverture chocolate has a rich, intense chocolate flavour that has a brittle texture, meaning that it makes a snapping sound when broken in two. As couverture chocolate is a premium chocolate that has a minimum of 31% cocoa butter, it not only has a high sheen with a glossy and smooth finish, but has a full flavoured, creamy mouth feel with a low melting point to melt as soon as it enters the mouth.
Compound chocolate is different to that of Couverture chocolate as the high percentage of cocoa butter is replaced by vegetable fats and other additives. As opposed to the arbitrary milk powder component that is found in Couverture chocolate, compound chocolate use a range of whey powders, whey derivatives and dairy blends that are used as a cheap substitute.

What does single origin chocolate mean?
Single origin is chocolate that has been made from cocoa beans from only one region, or in some cases, one particular farm or plantation. Most chocolate experts suggest that chocolate varies in taste depending on where the cocoa beans have been grown, and even depending on the seasonal conditions of the year that the beans have been harvested.

What is tempered chocolate?
Tempered chocolate is a process that alters the compounds of the chocolate to form a precise crystal structure. Tempered chocolate is made when chocolate has been heated and cooled to specific temperatures to form this crystal structure. It is more recognisable by its glossy and smooth appearance and the satisfying ‘snap’ sound that is made when it is broken in two, or bitten into.
The heating and cooling temperatures are dependant on whether the chocolate is white, milk or dark. The expert Chocolatiers from CACAO are skilled enough to temper the chocolate by hand and produce excellent results every time.

How do I best store my chocolate?
CACAO chocolate should be stored in a cool, dry place, at room temperature, and away from strong or direct sunlight. We do not recommend refrigeration of the premium chocolate from CACAO in order to best maintain the integrity of the product.
Chocolate should also be kept away from foods with a potent smell, such as onions, as it may affect the taste and quality of the confection.
